Method:

Cut the zucchini lengthwise, hollow out the insides, season lightly with salt and place in a baking dish. Briefly fry the sliced garlic in olive oil. Add a little chilli, sliced tomatoes, chicken breast in its own juices, rinsed beans, drained corn and a little water. Mix everything together and simmer briefly. Finally, stir the baby spinach into the mixture and season with salt and black pepper. Fill the zucchini with the mixture evenly and sprinkle with grated Parmesan cheese.

Baked stuffed zucchini - preparation

Place in a preheated oven at 180°C and bake for approximately 25 minutes until tender. When the zucchini is still warm, garnish with fresh basil and serve.
