While Christmas may be known for its abundance of festive treats, Easter certainly deserves its own share of delicious delights. We fell in love with this recipe after just one bite. The combination of crispy cookies and creamy hazelnut filling is simply divine.

Method:

Mix the flours with sugar and salt. Add the egg, honey, and softened sliced butter and knead until you have a firm dough. Let it rest in the fridge for at least an hour.

Then, prepare a pastry mat, lightly dust it with flour, roll out the dough to a thickness of about 3mm and cut out various Easter-themed shapes for the cookies. Remember to cut out the centers of half of the shapes to allow the hazelnut cream to peek through later.

Easter Cookies - Method

Place the cookies on a baking tray lined with parchment paper and bake in a preheated oven at 180°C for about 12–15 minutes.

Once cooled, spread the hazelnut cream on the bottom part of each cookie and sandwich them with the tops that have the centers removed. Dust with icing sugar through a sieve once completed.
