It is then perfectly complemented by a gelatinous layer of frozen raspberries. This creates a delicious combination that literally melts on the tongue.

Method:

Start by preparing the base cream. Place the gelatine slices in a pot of water for 5 minutes. Then add 3 tablespoons of coconut milk and let the gelatine dissolve over low heat. Then add the remaining coconut milk and honey and let it heat for a few minutes to combine. It must not get to a boil, though. Then let the mixture sit in the pot for half an hour. Stir occasionally to prevent the fatty part of the coconut milk from separating. Then prepare 4 glasses, divide the mixture evenly between them and put it in the fridge to chill for a few hours.

Coconut panna cotta - base

Then proceed to the preparation of the top layer. Bring frozen raspberries with water and honey to a boil. Then mash everything with a fork. Finally, add the starch dissolved in a little water and cook until thickened. Pour the raspberry puree over the panna cotta and refrigerate for another hour. When the dessert is chilled, garnish with  lyophilized raspberries and serve.
