Ingredients
EDAMAME HALLOUMI BOWLS
- 8oz halloumi cheese, thinly sliced
- 2 tbsp olive oil, separated
- 3 cups arugula
- Salt and pepper to taste
- ¾ cup edamame
- â…“ cup cucumber, diced
- â…“ cup pickled cabbage
- 2 Bags Quest Cheddar and Sour Cream Chips
Method
- Add 1 tablespoon olive oil and haloumi to a hot skillet over medium heat.
- Cook for 3-4 minutes on each side and golden brown.
- Toss arugula with olive oil and salt and pepper.
- Assemble bowls with arugula, edamame, cucumber, cabbage and chips.
