Method:

Start by peeling the carrots and grating them finely. In a blender, pulse the oats into smaller pieces to give the bites a more pleasant texture, though this step is optional. Next, in a bowl, combine the oats, vanilla-flavoured protein powder, cocoa powder, and cinnamon powder. Add the finely grated carrot and mix in the peanut butter and date syrup. Stir everything thoroughly to ensure the ingredients are well combined and form a sticky mixture.

Then, shape the mixture into small balls (we yielded approximately 10 balls from this batch). If the mixture becomes too sticky, dampen your hands with water while shaping the balls. If you find the mixture too dry, you can add a small amount of water to achieve the desired consistency.

Next, roll each ball in almond flour. Place the coated balls on a plate and chill them in the refrigerator for at least an hour to firm up. They can be then served plain or garnished with finely grated carrot and drizzled along with date syrup or nut butter.
