You definitely have to try this flavoursome treat. The base is made up of a lot of vegetables, but there are also legumes that enrich the dish to perfection, and also provide protein and fibre. The preparation is simple, and when you top the borsch with sour cream and dill, everyone at the table will be licking their lips.

You’ll need:

  • 400 g canned peeled tomatoes
  • 300 g carrots
  • 300 g beetroot
  • 300 g potatoes
  • 300 g cabbage
  • 200 g onions
  • 150 g RTE chickpeas
  • 150 g RTE black beans
  • 80 g sour cream
  • 4 balls of allspice
  • 2 tablespoons sugar-free ketchup
  • 2 stalks of celery
  • 2 cloves of garlic
  • 2 bay leaves
  • 1 L water or stock
  • 1 tablespoon erythritol
  • 1 cinnamon stick whole
  • lemon juice to taste
  • dill for serving
  • salt to taste
  • spray oil

Preparation:

Start by preparing the vegetables, wash, clean and peel all the pieces. Finely chop the onion, garlic and celery . Cut the carrots into approximately 1cm cubes, the potatoes into about 1.5cm cubes, and finally cut the cabbage into strips about 1cm thick. Next, get a large pot ready, spray it with spray oil and heat.

Vegetarian Borsch - vegetable preparation

The first step is to sauté the onion with the garlic and celery. After about 3 minutes add the chopped carrots, add a little salt and sauté together for about 5 minutes. Then pour the canned tomatoes and broth or water over the vegetables, add ketchup, prepared spices (cinnamon, allspice, bay leaf) and season with a little more salt and a tablespoon of erythritol. Bring to the boil.

Once the mixture starts to bubble, add all the remaining vegetables, i.e. beetroot, potatoes and chopped cabbage.

Vegetarian Borsch - procedure

Cover with a lid and let it simmer for about 40 minutes. After this time stir the rinsed beans and chickpeas into the soup, allow them to warm through and season as needed – you can add salt, sweeten it, or add a little lemon juice. Serve with sour cream and fresh dill.
