How should a perfect savoury breakfast look? Turkish eggs are a bullseye. The combination of beautifully runny yolk with yoghurt, spiced ghee topping, and herbs is simply superb. And when paired with homemade cottage cheese rolls, nothing will be missing from this perfect meal.

Method:

Let’s start with preparing the rolls. Mix the cottage cheese with the egg, oil, flour, baking powder and a pinch of salt to form a dense dough. Let it rest for 10 minutes. Shape the dough into 2 rolls and bake on a baking tray lined with baking paper at 180°C for about 25 minutes.

Then, mix the Greek yoghurt with minced garlic, ground pepper, and a pinch of salt. Divide the yoghurt into 2 bowls for serving the eggs.

The next step is preparing the poached eggs. Bring a pot of water to a near-boil and add vinegar. Crack each egg into a small bowl. Create a whirlpool in the hot water using a spoon, and gently pour the egg from the bowl into the water. Cook for 3 minutes, then carefully remove with a slotted spoon. Repeat the process for all eggs.

Melt the ghee in a small pan, add smoked paprika, chilli, cumin, and salt to taste. Let all the ingredients heat together, then set the pan aside.

Place the poached eggs into the yoghurt bowls, drizzle with spiced ghee, and garnish with dill, mint, and parsley. Serve with the cottage cheese rolls on the side.
