Refreshing desserts are not only useful during hot weather. With a coffee, they always come in handy. In this recipe, we focused on combining fluffy sponge cake with a light, protein-packed cream. Method:

Start by whisking the egg yolks and egg whites separately in bowls. Add the sugar to the egg yolks and whisk until thick and light. Next, add the water and oil and mix thoroughly to combine the ingredients. Then add the sifted flour and baking powder and stir gently to form a thicker batter.

Then whip the egg whites with a pinch of salt until stiff and fold them into the batter. If you rush it too much, the fluffiness of the egg whites will drop, which you don’t want. Spoon the batter into a 20 cm diameter cake tin, which you have previously sprayed with oil spray. Then place in a preheated oven at 180°C and bake for approximately 15 minutes. After baking, test with a skewer to see if it is done, if not, bake for another 5 minutes.

Allow the corpus to cool after baking and start preparing the cream. Whisk together the non-fat quark, cream cheese and vanilla Flavor Drops.

Finally, stir in the finely grated lemon zest and spread the cream on the cooled cake. Put the cake in the fridge to set for at least 90 minutes and then serve. If you want to garnish it, use a slice of lemon.
