The combination of potatoes, aubergine, ground meat, and béchamel sauce bakes into something truly wonderful. It’s a great way to whip up a complex and nutritionally balanced meal.

Preparation:
Start by making the meat mixture. Heat a pan and spray it with a bit of rapeseed cooking oil. Sauté the finely chopped onion until it’s translucent, then add the minced beef. Season with salt and pepper, and cook until the meat is browned all over. Next, add the can of chopped tomatoes to the mixture, along with the ketchup and oregano. Let it all simmer with the lid on for about 15 minutes. If the mixture gets too dry, add a splash of water as needed.
Meanwhile, wash the aubergines and slice them into roughly 1 cm thick pieces. Arrange them on a baking sheet lined with parchment paper, sprinkle with salt, and lightly spray with the cooking oil. Bake in the oven at 200 °C for 10 minutes.
Peel the potatoes and slice them into approximately 3 mm thick slices. Next, prepare the yoghurt béchamel by mixing the yoghurt with an egg, seasoning generously with salt, and stirring in the grated cheddar. Now, start layering everything in a baking dish sprayed with cooking oil. We used a 20×30 cm dish. Begin with a layer of aubergines.
Spread half of the meat mixture over the aubergines, then layer half of the potato slices on top.
Next, add a second layer of aubergines, followed by the remaining meat mixture and potato slices. Finally, spread the prepared béchamel sauce on top. Bake in the oven at 190 °C for about 45–50 minutes, or until the moussaka is golden on top. Let it cool slightly before serving.
