What makes the perfect cake? It starts with a soft, fluffy sponge that tastes amazing on its own. Add a juicy apple layer, and perhaps another layer consisting of quark and cream, and you’ll have a dessert that truly melts in your mouth. It’s perfect not only as a dessert but also as part of breakfast or a snack.

- 300 ml apple juice
- 200 g peeled apples
- 20 g vanilla pudding powder
- 20 g brown sugar

- 150 g low-fat quark

Method:
Whisk the egg yolks with brown sugar until the mixture becomes thick and pale. Add the water and oil, and mix well to incorporate everything together. Sift the plain flour, add baking powder, then gently fold them into the yolk mixture to create a dense dough. Beat the egg whites with a pinch of salt until stiff peaks form, and carefully fold them into the batter to retain the lightness. Line a baking tin (we used 20×20 cm) with parchment paper and gently pour in the batter. Bake in a preheated oven at 180°C for approximately 20 minutes.
In the meantime, chop the peeled apples into small cubes and cook them with sugar and 100ml of apple juice for about 10 minutes, until soft. Mix the pudding powder with the remaining apple juice, then add it to the apples and cook briefly until thickened. Spread this mixture evenly over the cooled sponge base and let it chill completely.
At this point, all you need to do is to prepare the last layer. Whip the cream with icing sugar until firm, then gently fold in the quark. Spread this creamy mixture over the cooled apple layer. Chill the entire cake in the refrigerator for at least 2 hours. Grate dark chocolate over the top just before serving. Slice and enjoy!
