Method:
Start by cutting the chicken breasts into smaller pieces. Season them with salt and black pepper to taste. Heat the oil in a pan and cook the chicken until it’s fully cooked through and golden brown. Once done, remove the chicken from the pan and set it aside.
Our tip: If you want to speed up the preparation even further, you can use pre-cooked chicken breast in brine. In this case, skip straight to sautéing the onion.
Finely chop the onion and garlic. Using the same pan, sauté the onion until translucent, then add the garlic. Cook briefly until fragrant, then add the peas. If needed, add a splash of liquid and simmer until the peas are tender. Return the chicken to the pan.
Next, add the single cream and stir everything together. Taste the mixture and adjust the seasoning with more salt and black pepper if needed. Finally, grate the parmesan into the sauce and allow it to melt, giving the sauce a rich, creamy texture.
Our tip: If you prefer, you can substitute parmesan with nutritional yeast for a different flavour profile.
Give everything one last stir, add some thyme if you like, and it’s ready to serve. You can choose whichever side dish you prefer – rice, pasta, potatoes, or bread all work brilliantly.
