How to include more vegetables into your diet? Apart from the classic salad, it’s also great to incorporate soups. You can choose between creamy or clear soups with chunks. No matter your choice, you’ll always enjoy a delicious meal and provide your body with a variety of nutrients.
Ingredients:
- 600 ml water (you can also use chicken broth)
- 500 g raw carrots
- 200 g celery stalks
- 4 cloves of garlic
- 3 cm grated ginger
- 1 small onion, diced
- 1 handful of fresh thyme
- salt to taste
- black pepper to taste

Method:
Begin by cleaning and cutting the vegetables into small pieces. Then, finely dice the onion and mince the garlic. Spray the pot with the cooking oil in a spray, add the diced onion, and sauté until it becomes translucent. Next, add the minced garlic and grated ginger, and sauté for about a minute until fragrant. Now, it’s time to add the carrots and celery, and continue sautéing for about 5 minutes, stirring occasionally to ensure even cooking. Finally, we’ll sprinkle in some thyme, salt, and pepper according to taste.
After mixing, pour in the water (you can also use broth), increase the heat, and bring it to a boil. Once boiling, reduce the heat, cover with a lid, and let it simmer for approximately 20–30 minutes or until the carrots are tender. Then, do a taste test and season with salt and pepper if necessary before serving.
Serve the soup warm, and consider garnishing it with herbs or fresh vegetables for an extra touch.
