This cabbage soup (Zelňačka) will win you over not only with its perfectly refined taste, but also with its content of beneficial micronutrients, which fermented cabbage is rich in. Its preparation is simple, so even the most novice of cooks can prepare it. Especially in cold weather, it warms the body perfectly and is satiating.

Ingredients:

  • 600 ml water or stock
  • 500 g fermented cabbage
  • 400 g potatoes
  • 200 g smoked chicken breast
  • 200 ml 12% cooking cream
  • 4 peppercorns of allspice
  • 2 bay leaves
  • 1 large onion
  • 1 tablespoon ghee
  • 1 tablespoon wholemeal flour
  • 1–2 tablespoons erythritol
  • 1–2 teaspoons red paprika
  • salt to taste

Method:

Start by peeling the onion and chopping it finely. Peel the potatoes and cut them into 1 cm cubes. Heat a tablespoon of ghee in a large pot and sauté the onions in it. Then sprinkle the red paprika over it and, together with a tablespoon of flour, sauté briefly for about 3 minutes.

Pour broth or water over the onions, bring to a boil, add the cabbage, which you have previously chopped, and add some of the cabbage brine to the soup. Then add the potatoes and the rest of the spices, i.e. the bay leaf, allspice and salt. Cover the soup with a lid and leave to simmer for about 15 minutes. Add the smoked meat cut into cubes and the cream to the soup after this time.

Bring to the boil again and simmer for about 10 minutes. Finally, sweeten with erythritol and season with salt as needed.
