Method:

In warm (not boiling) milk, mix 1 tsp of sugar, yeast, and let the mixture rise. Combine two types of flour with the remaining sugar and a pinch of salt. Add the egg, softened butter cut into thin slices, the risen yeast mixture, and knead the dough until smooth and almost non-sticky. Place the dough in a bowl, cover with a cloth, and let it rise in a warm place for an hour.

Once the dough has risen, roll it out on a floured surface into a thick sheet, and cut out circles using a glass. Place the circles on a baking tray lined with baking paper (you should get about 10 doughnuts). Cover the tray with a cloth and let them rise for another half hour. Preheat the oven to 180°C and bake the doughnuts until golden, about 20 minutes.

Once baked, let the doughnuts cool. Use a piping bag to fill the doughnuts with the hazelnut protein spread. Melt the chocolate with coconut oil and dip the tops of the doughnuts into this mixture. Let the chocolate set before serving.
