As you may know, we recently launched ‘Bene Meals’! Our new menu which highlights our commitment to offering a taste of Italian summers, inspired by ‘cibo povero’; traditional Italian dishes born out of scarcity but rich in flavour and nutrition. 

Today we’re back with a tasty recipe from our new menu for you to try for yourself! First up is our turkey bolognese – a firm favourite here at FFF! Give it a shot – you won’t regret it!

Ingredients

(serves 2)

  • 5ml olive oil
  • 20g onion
  • 10g carrot
  • 10g celery
  • 1 clove garlic
  • 100g ground turkey (thigh meat)
  • 100g ground turkey (breast meat)
  • 5g tomato paste
  • 10g sundried tomato paste
  • 130g crushed tomatoes
  • 40ml chicken stock
  • 40ml red wine (optional)
  • 1g dried oregano
  • 1g dried basil
  • 1 bay leaf
  • 1.5g salt
  • 1.5g pepper

Method

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the finely chopped onion, grated carrot, and finely chopped celery. Sauté for about 5 minutes until softened.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Add the ground turkey (both thigh and breast meat). Cook, breaking it up with a spoon, until browned.
  5. Stir in the tomato paste and sundried tomato paste. Cook for 2 minutes.
  6. Pour in the crushed tomatoes, chicken stock, and red wine (if using). Stir to combine.
  7. Add the dried oregano, dried basil, bay leaf, salt, and pepper. Stir well.
  8. Reduce the heat to low, cover, and let the sauce simmer for at least 30 minutes, stirring occasionally.
  9. Serve the turkey bolognese over your favourite pasta or as desired.
