Method:

Start by preparing the Linzer base. Mix the flour with the sugar and finely grated lemon zest. Add the egg yolks and softened butter, and knead into a firm dough. Chill the dough in the fridge for one hour.

While the dough chills, whisk the egg whites until soft peaks form. Gradually add 60 g of the icing sugar and whisk until stiff. Then whisk in the remaining sugar and transfer the meringue to a piping bag. Pipe small wreaths onto a baking tray lined with parchment paper, ensuring they match the size of the Linzer biscuits. Bake the meringue wreaths in a preheated oven at 100°C for around 30 minutes to dry.

Next, roll out the Linzer dough on a floured surface and cut out circles to match the size of the meringue wreaths. Arrange the biscuit shapes on a parchment-lined baking tray and bake in a preheated oven at 180°C for approximately 9 minutes.

Once the Linzer biscuits have cooled, spread a layer of strawberry Jammy Spread on them and crown with a meringue wreath.
