If you enjoy savoury strudel, you don’t need to rely on store-bought pastry. This homemade protein dough is incredibly soft, fluffy, and easy to make. The choice of filling is entirely up to you. We’ve gone with a classic combination of ketchup, chicken, and cheese—a fail-safe choice. This pizza roll works wonderfully as a snack, breakfast, or party food.

Method:
Start by preparing the dough. In a large bowl, combine the flour, quark, unflavoured protein powder, ghee, egg, and a tablespoon of salt. Mix the ingredients into a smooth, non-sticky dough. If the dough feels too sticky, add a little more flour; if it’s too crumbly, incorporate a bit more quark. Cover the dough and let it rest in the fridge for 20 minutes. Roll the dough into a large rectangular sheet, approximately 3 mm thick. Spread the ketchup evenly over the surface, sprinkle it with pizza seasoning, and layer the shredded chicken on top. Finally, cover the chicken with grated cheddar.
Roll the dough tightly from the longer side into a strudel shape, ensuring the seam is on the underside. Tuck in the ends neatly and transfer the strudel to a baking tray lined with parchment paper. Beat the egg lightly with a fork and brush it over the entire strudel.
Bake the roll in a preheated oven at 180°C for approximately 30 minutes or until golden brown. Allow the strudel to cool for a while after baking, then slice and enjoy!
