Method:

Rinse the sushi rice in a strainer until the water runs clear. Then put the rice in a pot, pour in hot water (do not salt) and boil for about 15 minutes until soft. While the rice is cooking, prepare a smaller pot and add the rice vinegar with cane sugar and salt. Bring everything together to a boil and let cool. Pour this dressing into the finished rice and stir thoroughly.

Then start preparing the other ingredients. Cut the cucumber into thin strips, drain the salmon and tuna and tear into smaller pieces with a fork.

Then take the nori seaweed, put it shiny side down and with wet fingers put a layer of rice on it. Leave about a 3 cm strip at the top. Place the prepared cucumber and tuna or salmon on top of the rice at the bottom.

Maki sushi with tuna and salmon - preparation

Using a bamboo mat (or baking paper), roll the sushi tightly into a roll from the side where you have the filling. When done, slice the roll with a sharp knife. Do this for the other rolls as well. This batch was used to make 4 rolls. The individual pieces of sushi are then served with soy sauce, wasabi and pickled ginger.
