This beautiful cake looks like a pile of moss in the middle of the forest. But don’t let the exterior fool you. Once cut, it reveals a luxurious quark and ricotta filling that also has bits of freeze-dried fruit in it. This light, protein-packed cake looks like it’s straight from the front of a café window and we guarantee it’s irresistible.

Method:

Start by preparing the corpus. In a large bowl, whisk the two eggs together with the kefir milk, oil and erythritol. In another bowl, mix together the tapioca and oat flour, spinach powder, baking powder and a pinch of salt. Gradually add the dry ingredients to the liquid ingredients and work into a smooth batter.

Pour this into a 22 cm diameter cake tin, which you have previously sprayed with oil spray. Place the prepared batter in a preheated oven at 180 °C and bake for about 25 minutes.

Meanwhile, prepare the cream. Beat quark and ricotta until smooth and sweeten with Flavor Drops. Finally, stir in the lyophilised raspberries. If you prefer smaller pieces, crumble them beforehand. Put the finished cream in the fridge to set.

When the corpus is done baking, let it cool completely. Only then can you continue to work on it.

Use a long knife or a cake string to cut off the top convex part of the cake, leaving only a flat surface. Then use your hands to break it into small pieces and set it aside. For the leftover corpus, cut off a thin layer around the perimeter, which has browned during baking, so that it is also nicely green on the side. You can hollow out the inside of the corpus a little, but it’s not necessary.

Spread Jammy spread over the entire surface of the corpus. Gradually spread the cream on it in layers.

Layer the quark to form a smooth hemisphere.

Finally, sprinkle the cake with the prepared crumbled cake corpus, which you lightly press onto the cream to make it stick well. Do this so that the whole section with the cream is covered and you get a beautiful green hemisphere. Then decorate the top with forest fruits. Put it in the fridge for a few hours to set and then you can get stuck into it.
