Method:

Cook the spaghetti in salted boiling water. Meanwhile, heat the oil in a large pan and sauté the ham cut into cubes with a halved garlic clove until golden brown. Stir the garlic well into the ham to extract as much flavour as possible. Then remove the pan from the heat and discard the garlic.

Spaghetti Carbonara - Preparing the Base

Crack the eggs in a cup and whisk them. Add ground pepper to taste and finely grated Parmesan to the eggs and mix well.

Once the spaghetti is cooked al dente, transfer it to the pan with the ham. Add the beaten eggs and about half a ladle of the pasta cooking water. Cook while stirring constantly until the sauce thickens, and adjust seasoning with salt and pepper if needed. Serve the spaghetti warm, garnished with parsley.
